To me, there’s only one salmon worth eating. This was a 14 pound fish which yielded 11 pounds trimmed. Brine overnight and a homemade marinade. Smoked for about 4 1/2 hours over Apple and Hickory amazing

What temp did you keep for a 4 hour salmon smoke? I often find I risk overcooking it going more than 1.5 hours at a 200-225.

I mean I would disagree with only one salmon worth eating, sockeye is amazing raw. But yes for smoking, Chinook is the best. But those are the only 2 ways I will eat salmon.
