40g protein pancake mix
10g oat flour
10g protein powder
1/2 tsp baking powder
50g yogurt (preferably not plain cause it’s a little sour)
1 egg
Pinch of salt
Vanilla extract / any other you prefer
Almond milk
50g pumpkin puree (can replace with others like apple)
1 tsp sweetener
2 tsp sugar free jam
- Mix the dry ingredients and wet separately. Then combine them all together
- Line 2 dishes with baking paper and divide equally.
- Put 1 tsp of jam and some pumpkin puree on top of each dish.
- Bake at 180C (preheated) for 20 min.
- Enjoy! (Store in the fridge after they’ve cooled down)
These are super filling and moist, the original recipe called for 35g flour and 25g protein powder so if you don’t have pancake mix you can use that! I altered it by adding the puree, it makes all the difference!! Makes them moist and fluffy!
