Minestrone soup
I wanted to like this more… but I thought it was just alright.
Do you have a favorite recipe to share for Minestrone soup?
* 4 cups vegetable broth
* 1 can (15 oz) diced tomatoes
* 1 onion, diced
* 2 carrots, diced
* 1 zucchini, diced
* 1 can kidney beans, drained and rinsed
* 1 cup pasta (small shape like ditalini)
* 1 tsp dried oregano
* 1 tsp dried basil
* Salt and pepper, to taste
* Fresh parsley for garnish
1. Add the broth, tomatoes, onion, carrots, zucchini, beans, oregano, basil, salt, and pepper to the Crockpot.
2. Cook on low for 6-7 hours or high for 3-4 hours.
3. Stir in the pasta and cook for an additional 20-30 minutes until the pasta is tender.
