🥬 Spinach and Cheese Puff Pastry Recipe
Ingredients:
1️⃣ 1 sheet of puff pastry (store-bought or homemade)
2️⃣ 1 cup fresh spinach, chopped
3️⃣ 1/2 cup ricotta cheese
4️⃣ 1/4 cup feta cheese, crumbled
5️⃣ 1 egg yolk (For egg wash before baking)
🥐 Homemade Pastry Recipe:
1️⃣ 1 cup Gluten Free Plain Flour
2️⃣ 1/2 teaspoon Salt
3️⃣ 1 Teaspoon Baking Powder
4️⃣ 1 Teaspoon Baking Soda
5️⃣ 1 Tablespoon Sourdough Starter
🍙 Spinach and Cheese Rice Paper Roll Recipe
Ingredients:
1️⃣ 2 sheets of rice paper
2️⃣ Leftover spinach and cheese (from spinach and cheese pastry)
Instructions:
Preheat the oven to 375°F (190°C).
Prepare the filling:
Heat the olive oil in a pan over medium heat.
Add the chopped onion and garlic, sauté until softened.
Add the spinach and cook until wilted. Remove from heat and let it cool slightly.
In a bowl, mix the ricotta cheese, feta cheese, spinach to the bowl and combine well.
Assemble the pastry:
Roll out the puff pastry on a lightly floured surface.
Cut the pastry into squares or rectangles, depending on your preference.
Place a spoonful of the spinach and cheese filling in the center of each pastry piece.
Fold the pastry over the filling to create a pocket and seal the edges by pressing with a fork.

Sprinkle sesame seeds on top if desired.

Unique recipe for sure, I've never seen spinage and cheese mixed together before. But I must say it looks very healthy and tasty, and the texture was interesting. Your instructions were easy to follow as well, nicely done!
