Mine is this vegetable casserole with hot sauce. I make it with sugarfree buffalo hot sauce as opposed to making my own sauce and I deleted the celery because I hate celery. You could easily add some chicken if you're not vegetarian without adding a lot of calories. I normally hate how blah cauliflower is, so the hot sauce is the perfect solution if you like a bit of heat. It's not super hot due to the vegetable broth diluting it.

Wow, thanks for that buffalo dip recipe! I love doing buffalo cauliflower but this seems so much easier
My favorite lazy meal is cauliflower rice burrito bowl. I cook some shrimp (or chicken or other protein of choice) in the air fryer with taco seasoning, mix it with cauliflower rice and pico de gallo, and top with all the salsas and taco sauce (I have at least 10 different ones in my refrigerator at any given time and I just pile them all on, but you can use whatever you have) and green onions.
Honestly have been loving cubed tofu dry pan fried with bbq sauce. It’s satisfying and light
California Sushi Roll Inspired Nori Wraps
Make the veggie and protein mix:
Thin sliced cucumbers or other crunchy veggie. I like shredded bell peppers and cabbage here too. (You can get a lot of these pre-cut so you don’t have to hassle with it.) Avocado. Surimi fake crab or scrambled egg whites if you don’t want crab (sometimes I use both) or whatever protein works for you. Zero-sugar Mirin. Soy sauce. Mayo and sesame oil (the tiniest amount you can still enjoy)
Mix all of the above ingredients to whatever 250 calorie ratio is appealing/filling, using mostly veggies. If you can go heavy on the veggies, this can be a lot of food.
Then use Salted nori sheets (you can use a lot of these for up to 50 calories) and wasabi if desired
Put a little of the mix on the seaweed wraps and top with wasabi.
And if I really need filler, I’ll use fewer nori sheets and layer the mix with Konjac rice too. 5-10 calories for a lot of “rice” to give it more of that California roll taste. If I have extra calories to burn, I’ll add furikake and some cream cheese or something similar.
