I use Brown Rice and Quinoa pasta from Aldi, and Kale for extra bite.
My hack for carmalized Onions is to actually roast them in foil in the oven at the same time as the Garlic. 275° for 2 hours.

I always add sun dried tomatoes to my pasta salads. It’s a great way to add flavor. I also highly recommend arugula!
Sun dried tomato also goes really well with pesto if you can find a vegan version! We do pasta, pesto, sun dried tomato and sometimes olives too
