Oven temp too high? They came off the mat nicely and didn’t brown at all. Just lopsided and they exploded. (Italian method)

    I had some slips when I over rested and baked high.

    But honestly, this is, like, an impressive oopsie, haha. No offense, I’d tell you to post it on BakingFails, but these are still world above most of the accidents that surface over there 😅 Good luck on better advice!

  2. The biggest clue to me is that they all spread from a central point. I’d guess the middle of your tray is bowed up a little, or your oven has a strong top fan. But you said they typically come out fine. Any different variables this time?

    It’s pretty plain to see that they are under mixed, right?

    The time I had a similar pattern, I realized I had left the oven light on. That extra heat caused the macs to heat faster on the side where they were exposed to the light.
    Aren’t macarons fun? /s
