SUCCULENT AND EASY HOMEMADE GYROS WITH TZATZIKI SAUCE

INGREDIENTS
Quick Tzatziki Sauce
* 1 cup Greek yogurt
* 1/2 cup cucumber (peeled, seeded, and diced)
* 2 teaspoons dill weed
* 1 teaspoon red wine vinegar
* 1 Tablespoon extra-virgin olive oil
* Salt & pepper to taste
Greek-Style Gyros
* 1 16lb. Ground lamb
* 1 16lb. Ground beef
* 2 tablespoons seasoned salt
* Coarsely ground black pepper
* 10 garlic cloves, chopped or 2 tablespoons minced garlic
* 3 Tablespoons oregano, chopped, divided
* 3 Tablespoons red wine vinegar
* 2 Tablespoons rosemary
* Olive oil
* Onion
* Sliced lettuce and tomatoes, cheese and onions , for gyro assembly (optional)
* Pita bread, for gyro assembly
INSTRUCTIONS

* Preheat oven to 350°F.
* Make the tzatziki sauce with the tzatziki sauce ingredients.
* Place in the fridge.
* Place ground lamb and/or ground beef in a large bowl and season generously with seasoned salt and pepper, coating evenly. Add garlic and onion. Sprinkle 2 Tablespoons rosemary, cumin and oregano all over and thoroughly in the ground lamb and ground beef.
* Form into a meatloaf and place in the oven.
* Cook lamb and ground beef loaf for forty five minutes.
* Remove pan from the oven and slice , then assemble in your preferred order with the remaining gyro ingredients and tzatziki sauce on a gently warmed flat-bread pita. 
* Fold and wrap in foil to help hold it stay together.
* Serve.
