Kenji Lopez has a bar style tortilla pizza that’s fucking incredible, I eat them literally every day lmao. Key part of it is that you fry the pizza in a pan first, cast iron or stainless, then put the entire pan in the oven set to broil, done right, which is actually a bit tricky, it’s perfectly crispy and good enough that if I went to a bar and restaurant and was served it I’d be impressed.
