NOW SERVING. WE ARE INSIDE THE BEAUTIFUL LEVEL. TERROR VISIT OMAHA BRINGING US TO FIVE, NINE, SIX NORTH 156TH STREET. AND I’M SO GLAD TO BE JOINED BY CHEF AND OWNER. NICE TO MEET YOU. APPRECIATE IT. THANKS FOR HAVING ME ON BOARD. YOU HAVE GREAT ENERGY ABOUT YOU. YOU KNOW, I HAVE TO. FOR OUR VIEWERS THAT DON’T KNOW ABOUT LE VOLTAIRE, WHAT ARE THEY IN STORE FOR WHEN THEY COME BY? SO I THINK LOUISVILLE THAYER MEANS A LOT OF THINGS. LOUISVILLE THAYER VOLTAIRE WAS A FRENCH WRITER. SO WHEN SEDGWICK OPENED THE PLACE, HE DECIDED TO NAME IT AFTER THE FRENCH WRITER. I’VE BEEN HERE SINCE 2010. THEN I TOOK OVER. I BOUGHT THE PLACE ABOUT THREE YEARS AGO AND IT’S KIND OF A CONTINUATION OF WHAT HE STARTED, BUT OF ALSO MY OWN VISION OF WHAT I THINK THIS PLACE WILL BE. WANT TO BE. I’VE DONE A LOT OF CHANGES. I HAVE SOME GREAT STAFF. WE’RE DOING TABLECLOTH EVEN THOUGH WE’RE FINE DINING, BUT I DON’T. I’M NOT PRETENTIOUS. I LOVE THAT I WANT PEOPLE TO FEEL LIKE THEY GOT TO WEAR TWO PIECE SUIT AND TIE JUST TO COME HERE. THAT’S NOT THE PLACE. MY PRICE IS VERY MODERATE AND I LOVE COOKING, AND I THINK EVERY RESTAURANT, WHATEVER PRODUCT YOU PUT ON YOUR TABLE, SHOULD TASTE GOOD AND SHOULD MAKE SHOULD BE MADE WITH LOVE AND AFFECTION. I’M BIG ON THAT. LIKE A LOT OF LOVE. YES, THERE IS A LOT OF LOVE OVER HERE. I WILL TELL YOU THAT RIGHT NOW. CHEF WILSON CAN YOU TAKE US THROUGH A TOUR OF THE TABLE AND WHAT WINE DO YOU HAVE ON THE TABLE AS WELL? SO OVER HERE WE HAVE A RED WINE. IT’S A MALBEC. MALBEC? YEP. BEAUTIFUL. SO IF YOU GO TO A FRENCH RESTAURANT, YOU ALWAYS HAVE TO HAVE ESCARGOT. OF COURSE. AND I DON’T CARE WHAT OTHER RESTAURANT SAYS ABOUT THE ESCARGOT, I THINK MINE IS THE BEST. OH MY GOSH, THAT LOOKS INCREDIBLE. I LOVE IT. TYPICALLY IN FRANCE THEY DON’T PUT CHEESE, BUT IN IN AMERICA WE WE LIKE TO. YEAH WE LIKE CHEESE. WE ANYTHING CHEESE YOU KNOW. SO WE HAVE ESCARGOT WITH CHEESE. IT HAS LOTS OF SALT, PEPPER, GARLIC. IT’S VERY GARLICKY, VERY FLAVORFUL GARLIC OVER HERE IS A STAPLE. IT’S A BOUILLABAISSE. SO TYPICALLY BOUILLABAISSE IS DIFFERENT. FISH YOU KNOW LIKE IN A SEAFOOD BROTH. SO I GOT SALMON I GOT COD FLOUNDER AND I GOT A TOAST POINT WITH THE WOOD. HE GOT THE WHOLE OCEAN IN THERE. YEAH, I GOT THE WHOLE OCEAN ON ONE PLATE FOR YOU. I LOVE THAT. AND I GOT SOME MUSSELS TO HIGHLIGHT COLORS, CONTRAST. NICE. YEAH. AND OVER HERE IS THE SHICKLEY DE LA MER. SO IT’S A DISH WE DO FOR FALL AND WINTER. SO IT’S SIMILAR TO THE SEAFOOD. THE BOUILLABAISSE. BUT THE DIFFERENCE IS THIS ONE HAS CLAMS, HAS MUSSELS, THE THREE FISH. BUT IT HAS CREAM. THE CREAM KIND OF BALANCE THE THE BROTH AND ALSO UNDERNEATH IT IS SAUERKRAUT.
