Hi,
I made fresh gnocchi today (been a few hours already) and I won't be eating them until later tonight or tomorrow. Is it better for conservation to boil them asap or should I boil them at last minute ?

Also bonus question : can I freeze them and if yes should I freeze them boiled or raw ?

    What I do is boil them immediately then freeze them. Boil them again when you intend to eat them and they’ll be good as new.

    I would freeze them uncooked. That’s typically how the pasta shop I buy them sells them. They don’t take long at all to cook, even from frozen

    FREEZE THEM RAW! no other way, learnt from my Nonna, she was born and raised in Calabria, make sure when u freeze them raw they aren’t all pushed together, you don’t want them to stick together, keep them on a flat tray individually

    They’re fine to keep in the refrigerator for the day. I’ve never held them in the fridge for two days but I would think they would be fine.

    Freeze them uncooked. When you go to make them, drop them frozen right into your boiling water.

  5. The recipe I use makes two baking sheets worth of gnocchi, which my wife and I definitely can’t finish in one sitting. We make one tray and put it in the fridge until we’re ready to cook. We make the other tray and put it in the freezer. Just make sure the gnocchi are flat in a single layer. You can then bag them.

    I like my gnocchi sautéed to get a bit of a crust on them, so I boil them first, then sauté them in butter and/or olive oil. If you do this, you can boil them gently first, then chill them.
