Lentils for lunch

    3 days lunch for 2 people

    – 250gr of uncooked puy lentils, cooked

    – 10 medjool dates, chopped

    – 100 gr feta cheese, diced

    – 30 gr parsley, chopped

    – 3 beetroots, cooked and diced

    – 2 hands full of pecans, roughly chopped

    – 1 cucumber, diced

    Dressing:

    Put 3 tablespoons of balsamic vinegar, 1 tablespoon of mustard, 75ml olive oil in a jar, shake firmly and throw it in.
