







I've only made pork tenderloins. They come out like Filet Mignon! Amazing. So tonight (we'll last night initially) i decided to do a chuck roast. I seasoned it with Meat Church Blanco, followed by 16 mesh pepper. I melted a stick of butter with a few drops of liquid smoke. Poured the mixture into the bag with the pot roast and stuck it in the freezer to make it easier to vac seal. Put it into the sous vide last night and set it for 20 hrs @ 137deg. It was amazing! It was more like a prime rib than a chuck roast. I'm loving this thing!

Butter to baste… But not in the bag.
It draws the meat flavors into the butter so you end up losing some of the flavour.
Garlic… Temp isn’t high enough to cook it/release any flavour. There’s also a botulism risk. Not sure how big a risk though.
But mainly it’s a case where garlic powder is the order of the day.
When basting though… Butter and garlic rule the day
You should contact a butter lawyer immediately. He might give you a slight chance to avoid prison time and get away with probation.
I did a chuck roast Sunday evening. Shredded it then served it out of au jus. So good.
