    I ate one of these when I visited New York and I can’t stop thinking about it. it was like a painted chocolate shell with mousse filling

    Can confirm. marzipan. We made them in culinary school. Extremely time consuming and expensive ingredients.

    Fortnum & Mason has delightful smaller versions of this in boxes. Although Williams Sonoma carries sometimes, the markup is wild, so probably order online from F&M they deliver to the U.S. (I’m in Austin and always have some of these around for the holidays)

    Everyone saying this is Marzipan is wrong.

    There’s no patisseries in Austin doing Entremets like this. The closest as far as I know D’Caramel in Southlake, although there may be someone in San Antonio or Houston doing it. Huge miss for Austin imo. I’m a slut for these little pastries.

    Dcaramel is incredible and worth the drive to Southlake if you are ever in dallas or Fort Worth, or passing through the area

  10. Violette bakehouse may be another gamble, like Rocheli. They had something similar for valentine’s. A heart-shaped chocolate shell mousse.
