Trippa alla Romano with Pane Toscano. Couldn’t find it anywhere here in Western NY so I had to take matters into my own hands.
If it’s an Italian dish made by an American am I breaking the rules? Just wanted to show my appreciation to an underrepresented dish! I added the cheese after, made the bread myself too!

Bravo, the only thing the chunks of trippa are too wide. Have you boiled it before cooking with the sauce? You can add cheese directly in the sauce as well Btw are those potatoes? 😂
