grew up eating these so very nostalgic. the great thing is you use whatever you have in the pantry. the 3 key components are instant noodles, chopped pickles or peppers, and mayo. i did kewpie mayo, chopped pickles, seasonings, and an egg

    My new goto is loaded ramen

    – one pack of ramen
    – one egg
    – dehydrated ramen toppers (there are tons on amazon)
    – protein, (spam, chicken, beef, etc)
    – handful of cheddar cheese
    – chopped green onions if you have them
    – crispy fried onions (also available on amazon)

    I make the ramen with just enough water to cover the noodles. This way the noodles cook, but they don’t end up soupy…

    I start with the water, and turn the heat on, break the ramen noodles in half along the fold, and toss the seasoning packet, noodles, ramen toppers in the water

    Bring that to a boil as I scramble the egg, and dice the protein.

    By the time I’m done getting the egg and protein ready, the water is ready.

    I mix in the egg with noodles as quickly as I can, toss in the protein, and stir it up until it’s well mixed.

    Last thing while it’s still on the heat, is to toss in the cheese, and stir it until it’s all melted.

    Pour it in a bowl and top with crispy onions and chopped green onions.

    Oh man, it’s so good, I’d eat it every day if it wasn’t for the sodium… try to limit myself to maybe once a week

    The combination of the creaminess from the cheese, and the crunch from the crispy onions and just enough water to cook the noodles so they aren’t soupy, is just phenomenal….and it takes less than five minutes from start to finish
