Ingredients
1 salmon fillet (120–150g)
dry Mediterranean style couscous 110g
boiling water 170ml
Handful cherry tomatoes, halved
1/4 cucumber, diced
1 tbsp olive oil
1/4 red onion, finely chopped
1/4 tsp cumin
Salt, pepper, lemon juice
30g feta or mozzarella (optional)
Halved the couscous as made 2 portions
Instructions
Preheat oven to 200°C (fan 180°C).
Rub salmon with 1/2 olive oil, cumin, salt, pepper.
Bake salmon for 15 minutes.
Place couscous in a bowl, pour over boiling water, cover and leave 5 minutes.
Fluff couscous and mix with vegetables, 1/2 olive oil, and lemon juice.
Top with cooked salmon and crumbled cheese.
