I’ve been having this lentil soup around mid-day and it’s derived from my mother’s daal (South Asian lentils) recipe. But I skip the oil and chillis etc.

Ingredients:

1/4 cup yellow lentils
1/3 cup red lentils
1/2 tsp salt (start with this and adjust as needed)
1 whole green chilli OR 1/2 tsp red chilli powder
A pinch of turmeric powder
1 and a half or 2 cups water

Instructions:
1. Mix the lentils together and wash and soak them for 30 minutes.
2. Put the lentils in a deep pan. Cover with water and put on high heat. Add salt, a pinch of turmeric, 1 whole green chilli (do not chop) OR 1/2 tsp red chilli powder.
3. Let it come to a boil then remove the bubbly layer that forms on top.
4. Lower heat and cover the pan with a lid (but not fully covered because it can boil over) and let it cook for 30ish minutes or until everything is sort of blended together.

Yields about one bowl and perfect for a small lunch. Have it with a fresh salad or squeeze some lemon juice in it. I’ve been doing this everyday and I love it!!
