RECIPE: (*conversions are approximate) Ingredients – 200g firm tofu 1 cup (130g) vital wheat gluten / gluten flour 1/2 cup (65g) plain flour 2 tbsp (15g) paprika 1 tbsp (20ml) oil 1 tbsp (20ml) soy sauce 1 tbsp (15g) minced garlic 1 tsp (2g) cracked black pepper 1 tsp (3g) chilli flakes 1 tsp (1g) dried herbs Method – 1. Add all ingredients to a food processor, process until combined (If you don’t have a food processor, grate or finely crumble the tofu and then add all the ingredients to a bowl. Mix until combined) 2. Knead mixture for 10 minutes. 3. Rest for 10 minutes. 4. Divide into 6 portions, quickly knead or flatten with a rolling pin and then shape into sausages. 5. Rest for 10 minutes, meanwhile bring a pot 1/3 full of water to the boil. 6. Add chorizo to the pot, turn water down to a simmer and cook for 10 minutes. 7. Drain the water. 8. The chorizo are now ready to cook sliced or whole, air-fry, grill, fry or barbecue.
