it’s technically spring, but the 34 degrees on my thermostat says otherwise.
therefore, I will continue making soup until further notice.
avgolemono soup to be exact.
It’s been my hyper fixation since November and I’m not mad at it, i can eat the whole pot in one sitting honestly.
r e c i p e :
butter (or olive oil)
vegetables – celery, onion, carrot ( i also added zucchini because i can, but it’s optional )
chicken ( i like to get the rotisserie and shred it )
chicken broth
two egg yolks
dill seasoning
half of one lemon
rice (i used basmati)
in a pot, melt some butter down & add your chopped vegetables.
sauté that until the celery and onions become soft and more translucent.
add in shredded cooked chicken
season to your liking ( i added lemon pepper, onion, & rosemary )
add in chicken broth ( I didn’t measure, just mixed a scoop of chicken base in some water )
let that simmer on low (but don’t let it boil)
while that’s simmering, to a bowl- add in the two egg yolks ( just the yolk! )
sprinkle in your dill, and squeeze in your lemon juice.
mix thoroughly.
remove a small amount of chicken broth from your pot and add it to the egg yolk mixture.
stir that well.
add rice to pot & turn the heat up until it starts to boil.
once the rice is cooked, remove from heat and let cool down a few mins before adding the egg yolk mixture to the pot.
serve & enjoy!
( I love having a side of crispy bread to go with it )
