This is the first round. I'll do another 40lbs Saturday night into Sunday. Then next weekend doing 40lbs chicken breast. The weekend after that I'm hosting my infamous BBQ.

The pork was done with a mustard rub then my blend of Seasonings to my my dry rub. Smoked at 225 for 11h with a blend of hickory and apple. I also injected twice a blend of the seasons and apple cider vinegar and apple juice.
