Where are my Low Carb ladies at ??? If you miss eating Lasagna but can’t have the noodles, try my recipe 🌿💪🏽
“Noodles” :
– 4 medium zucchini’s
– salt
Meat Sauce :
– 1.5 pounds lean ground beef
– 3 tbsps sofrito
– zucchini(diced)(i used the scraps from my zucchini slices)
– 1/4 green AND red bell pepper(diced)
– 1/4 small white onion (diced)
– 1 tbsp minced garlic
– 36oz pasta sauce
– season to your liking!
Cheese Sauce :
– 1/3 cup ricotta cheese
– 1/3 cup cottage cheese
– 1/2 block Boursin(garlic herb)
– 1 tbsp minced garlic
– 1/4 cup Italian cheese blend
– 2 tbsps parsley(chopped)
– 3 tbsps shaved parmesan
– season to your liking!
Topping :
– italian cheese blend
– fresh mozzarella(shredded)
– chopped parsley(optional)
SALT & DRAIN YOUR ZUCCHINI SLICES PRIOR TO LAYERING TO PREVENT YOUR LASAGNA FROM BEING WATERING!!!!!! (don’t say i didn’t warn you) 😁
BAKE 375°F for 20 mins
BROIL on HI for 1 min at the end.
