Grandma is in the hospital and grandpa is left on his own so made up a bunch of easy microwave meals for them. Including gumbo and rice cubes, pasta with jarred sauce and extra veggies grated into it, and my grandma's favorite baked chicken recipes with wild rice and frozen veggies. Thankfully they're not picky eaters as long as it's not too fancy.

    Pasta is just a jar of Prego sauce with sauted onion and a grated zucchini cooked into it.

    The baked chicken was originally a recipe my grandma used for quail but I use chicken thighs. Just saute some mushrooms and onions in butter then add a can of cream of mushroom soup, white wine, oregano, rosemary, salt, pepper, and a teaspoon kitchen bouquet. Pour over chicken thighs and bake, covered, at 325 for one hour, uncover, flip and bake for 20 minutes. The wild rice is from a box.

    We did this for my Grandpa in his last decade. Aunts and I would sign up for 1 meat and 2 veggies- to vary the meals. He loved it.

    Gotta love Souper Cubes! (Red salsa pulled chicken and tomato soup still saved with mine in my freezer. Finally got the 1/2 cup silicone freezers for garlic confit compound butter. I digress!)

    But good on you. Took care of my grandmother with dementia during p*nd*m*c (plus a few years beyond 2020) along with my immediate family, Keep up the good work, internet person!
