It’s Corned Beef Season and so we are on the hunt for the best Marble Rye for our left overs. This is last year’s plate with Bub and Grandma’s Rye… but it leans heavy on the sourdough.
The best Marble Rye we’ve had was from Homeboy Bakery, but they don’t make it anymore. We know Johnny’s uses Tartine’s… Langers uses Fred’s…. But wonder if there is any others that stand out. Willing to travel for a standout loaf.

Forget about the bread, are you serving corned beef out of your house? Cause I don’t want to buy a 3lb corned beef.
Schwartz on Burbank makes a good rye, not marble but pretty great
[Jyan Isaac Bread](https://jyanisaacbread.com/collections/all) in Santa Monica is beautiful and delicious. I buy from their stand at the Larchmont farmers market on Sundays.
It looks delicious but it doesn’t look like marbled rye? Where’s the pumpernickel?
Ralph’s markets sometimes sells fresh marbled rye in some of its in-store bakery sections

Here’s the Jyan Isaac loaf. It’s more rustic than we were looking for. But it’s still tasty.

Here’s the Homeboy loaf. As you can see, it’s more of a sandwich loaf than the Jyan Isaac. If you look at it and think you could probably get something like that in the supermarket, you can’t because it is that good. I like their jalapeño corn rye loaf for many sandwiches unfortunately I don’t think it goes well with corned beef or pastrami.
Thanks to u/TrueStress3423, I think I found the rye I was hoping for. I didn’t like how flat Tartine’s Marble Rye was so Jyan Issac’s bread had the real boule shape I was looking for. It also for a whole loaf was cheaper at $12.
I made a flat in the sear and braise method since it’s leaner and slices better for sandwiches. We made a traditional Ruben with Sauerkraut and Russian Dressing. Served with Salad and Aldi’s seasonal Beer and Cheese chips. It was amazing. The crumb on this bread is so tender. And the flavor was subtle, but added to the sandwiches. We sliced it quite thin…. So many more Sandwiches will be made! Marble Rye also makes the best grilled cheese.
