Shaw's had a really good deal on corned point brisket this past St Pats day, 1.77 a pound. It was a digital deal that required you use the app, thanks to having 2 lines for myself being work and personal, and my wife, I stocked up on cheap but high quality corned beef briskets.
Cooked up one of the remaining briskets today for hash. Used a 2.5lb brisket with a bag of frozen diced potatoes, ended up with 3lbs of hash.
Corned beef brisket was cooked in my electric pressure cooker with the seasoning pack, halved onion, carrots and celery stalks for an hour. Let it naturally release for 30 minutes.
Removed the cooked beef, strained the stock into a pot on the stove and brought to a boil. Seasoned the corned beef water with onion powder, garlic powder, pepper, touch of salt. Added the frozen diced potatoes, brought back to a boil and then drained when bite tender.
Diced the brisket, added the potatoes and mixed well, adding some of the cooking water to keep everything moist as it cooled.
Hash in the fridge chilling, tomorrow Ill cook up a fresh batch of homemade hash for breakfast with poached eggs, then portion the rest into 1 cup vacuumed sealed bags in the freezer for long term storage.

You know, I’ve never actually used my corn beef to make a hash. I should try it some time.
