    Iv seen better cuts of steak than this….it looks like it’s been bought from a supermarket, the best cuts of steak come from a butcher, when I was in Miami we went to the steak house Iv got say it was the best steak Iv tasted in my life…it just melted in your mouth and it was cooked over a open fire on a grill and it was at least 3 inches thick, 😋😋😋

    You see someone do something wrong, you can gently tell them how to correct them.

    OP: Congratulations on your medal! Now about the steak:

    You have a nice piece, but it has very low marbling and it is thin. In general (but it’s all personal taste), such pieces need to be seared very fast and served rare (more would be seen as too dry for most)

    Your crust is very nice but, in the future you have to go hotter and faster when searing.

    This is a quick example of a filet with similar thickness. You can see the crust is similar to you (very nice gold brown and crispy), but difference is that it is still rare inside. This was 4x 30 seconds sear (twice on each side with a 90° turn).

    You can cook it further by placing it in the oven at 240°F / 120°C for a couple of minutes, but it shouldn’t be necessary when it’s so thin.
