Ingredients: – 1/2 smallish head green cabbage, sliced and diced – 1/2 bundle green onion, thinly sliced – 1 English cucumber finely diced – Herbs of choice, minced (did some chives, cilantro, Italian parsley) was around a cup? Follow your heart. If I had dill I would’ve thrown that in too.
Dressing: – 1 cup Italian parsley – 1 cup basil – Handful of chives (if using a container I did half in salad and half in dressing) – 3 garlic cloves – 1 small shallot – 1/4 cup raw cashews – 2 tbsp water – 2 tbsp coconut aminos – Juice of 2 lemons (about 4 tbsp) – Salt and fresh cracked pepper to taste
To serve: I like to eat this with a mix of potato slices and siete tortilla chips. For potato slices bake at 425 for 45 min flipping halfway.
Directions:
1. Blend the dressing together until smooth. I’m using a 32 oz blender, if using a larger blender you may need to double it to help it blend through. 2. Toss and combine with your chopped salad!! Taste and season with salt and fresh cracked pepper until you reach flavor town.
