The Easiest Mushroom Soup!
Trust me, even if you’re not a mushroom lover, you will love this! And it’s SO easy!
You can take it up a notch by making it fancier or even make it simpler, but this recipe is a MUST for your arsenal!
• I’ve used 150-200g button mushrooms for this that I have finely chopped.
• Also used 2 dried shiitake mushrooms that I rehydrated by soaking in hot water for 15 mins (you can avoid it if you don’t have it)
• in a pan, heat 1 tbsp mix of oil + butter
• add 1 medium onion, finely chopped and sauté for 2 mins. Don’t let it brown, just let it get pink.
• now add 1/2 tbsp minced garlic and cook for 1 min till fragrant.
• now add the chopped mushrooms and let it cook for a few mins till all the water evaporates and mushrooms get a little colour.
• add herbs of your choice – I’ve used a mix of chilli flakes, Italian seasoning, thyme and rosemary, salt and pepper. Use what you have on hand.
• add 1 1/2 tbsp of flour – I’ve used wheat flour. Cook for 1 min.
• now add the reserved mushroom water or vegetable broth or water. Let it thicken on a low flame and then add 1 cup of milk, let it simmer till thickened.
Now you can serve it as is, with some green onions and crusty bread or you can do that after blending it to get a smooth texture! Hope you enjoy it!
