1/2 cup Crumbled Cheese
2 cups Roasted Sweet Potatoes
2 cups Roasted Carrots
1 pc Apple (diced)
1/2 cup Candied Pecans
1/2 cup Mint Leaves
DRESSING:
2 tbsp Mustard
1 tbsp Honey or Maple Syrup
1 clove Garlic minced
1/4 cup Apple Cider Vinegar
1 Lemon Zest and Juice
1/2 cup Olive oil
Pinched Salt and Pepper
