You will need:
3 cups strong bread flour 390 g
1 1/2 cups lukewarm warm water 360 g
1/2 tbsp sugar
1/2 tbsp salt
1 tbsp instant yeast
1/4 cup extra virgin olive oil
You choice of pizza toppings olives onion mozzarella oil marinated tomatoes and fontina
Red pepper flakes, rosemary and oregano.
Preparation:
Mix the water with the sugar and yeast, set aside for 5 minutes.
Mix the flour and salt add the whole amount of water.
Mix just until the dough comes together. Cover and let it rest for 30 minutes covered. 30 minutes later use just water to wet your hand to stretch and fold the dough. Cover and let it rest 30 more minutes. Do the same thing two more times every 30 minutes.
Add the oil, spread and then add the dough. Cover and let it rest for 1 hour this time.
Dimple the dough and bury the olives deep inside the dough, add the seasoning/ rosemary pepper flakes and oregano, bake at 450 F for 20 minutes. Take out of the oven , add the cheese, the rest of the toppings and bake until the cheese melts nicely. Serve warm and enjoy the cheesy crunchy soft goodness.
