Melissa’s Pasta Primavera is Perfect for Spring | NYT Cooking

This simple pasta primavera recipe uses a combination of the earliest vegetables available in spring — asparagus, peas and spring onions — making it a true celebration of the season. The sauce works best with springy egg pasta, preferably homemade or a good purchased brand. Make sure not to overcook it; you need the chewy bite to stand up to the gently cooked vegetables. If you can’t find good fresh English peas, you can substitute frozen peas, but don’t add them until the last minute of cooking.

    I would have loved this more with orecchiette pasta over a longer style pasta like the fettuccini u used. Regardless, great idea I’m ganna riff off this. Cheers!

    Perpetuating 2 falsehoods within the first minute. First, seawater is 3.5% salt, so in 4 quarts (close enough to 4 litres) you'd need 140g of salt , that's 5 Oz. Second, the delay in reaching boiling by adding the salt when the water is cold, is a matter of less than a minute. If you want hot water quickly, use a kettle.

    1:06 I really misunderstood chemistry class when we added salt to water to see if it boiled faster or slower. All these years I thought it made water boil faster

    Jfc people still cook pasta in a huge pot of water? And then complain that it takes long to get to a boil. Yeah no shit. Cut down on the water, and as long as you keep things moving and/or get it to a rolling boil, the pasta won't stick to each other

    If people haven’t tried it, taste raw asparagus. Very close to raw peas. Tuck some in ur lunch bag with baby carrots, some grape tomatoes;rip off a hunk of zucchini and chomp on it like an apple, half a bell pepper and u have the majority of ur daily veg without even trying.

    Never used creme fraiche like this before so going to give this a go.Our chives are really prolific right now so will garnish at the end.
