I kept going with the tomato sauce tonight. We have a Southern Italian themed dinner tonight.
A recipe I worked from my Tasting Italy book from @AmericasTestKitchenthat comes from Puglia. I used San Marzano tomatoes and served a Nero D’Avola wine.
Well, enough of all that. Get an oven preheating to 500⁰. In a roasting pan, warm up a TBSP of olive oil and add a few cloves of garlic, a tsp of red pepper flakes and a 1 tbsp of tomato paste. Once that has cooked for a few minutes, add a cup of white wine. Cook for a minute, reduce a bit. Then add a 28oz can of crushed tomatoes. Cook that for 5 mins. Add a 2-4 pounds of mussels, mix. Cover the pan with foil and put in the oven to roast the mussels for 15-18 mins. Any mussels that don’t open, discard. Now add a few tbsp of minced parsley. You’re done. Serve with crusty bread and a nice red wine. You’ve got yourself a great meal. That whole meal cost me about $11. … Eat.Drink.Savor.
