Korean-style tofu rice bowl

    **Sauce**

    * 1/4 cup soy sauce
    * 2 tbsp brown sugar
    * 1 tbsp rice vinegar
    * 1 tbsp sesame oil
    * 1 tbsp gochujang
    * 1 cup sliced onions
    * 2 cloves garlic, minced
    * 1 tsp ginger, minced

    **Tofu**

    * 1 block of extra-firm tofu, pressed and crumbled
    * 1 tbsp vegetable oil
    * Green onions and sesame seeds for garnish

    ###Instructions

    1. In a small bowl, mix together soy sauce, brown sugar, rice vinegar, sesame oil, garlic, ginger, and gochujang. Set aside.
    2. Heat the vegetable oil in a pan over medium-high heat. Add the crumbled tofu and cook until it’s crispy and golden brown on all sides. This may take about 10-15 minutes.
    3. Add the spring onions, fry for a few minutes then add the sauce and coat all together.
    4. Serve up with some rice, veg and enjoy!!

    I think it was you who posted a recipe a good while ago for these little tofu-plantain cups, and boy, were they amazing. I made them for my vegan roommate at the time, and they just hit the spot like nothing else!
