**🍞 Ingredients for 2 Panettone (5-inch diameter)**

**🌟 Starter (Biga)**
– ½ cup warm milk (4.5 fl oz / 135 ml)**
– ¼ cup all-purpose flour (4 tbsp / 0.9 oz / 25 g)** *(taken from the total amount)*
– ½ tbsp sugar**

**🍞 Dough**
– 2 ½ – 2 ¾ cups all-purpose flour (11–11.5 oz / 310–325 g)** *(+ up to ¼ – ⅓ cup if needed)*
– ½ cup sugar (3.9 oz / 110 g)**
– ½ tbsp honey**
– ½ cup unsalted butter (4 oz / 115 g, 82% fat)**
– 2 tsp active dry yeast (or ¾ oz / 18–20 g fresh yeast)**
– 6–7 large egg yolks (3.7 oz / 105 g)**
– Pinch of salt**
– 1 tsp vanilla extract**
– ½ tbsp orange juice**

**🍊 Candied & Dried Fruits**
– 3 tbsp orange juice (1.4 fl oz / 40 ml)**
– 3 tbsp brandy or rum (1.4 fl oz / 40 ml)**
– 1 cup mixed dried fruits (5.3 oz / 150 g)** (raisins, dried blueberries, candied orange peel, etc.)
Bake for 40-45 minutes, until a skewer comes out dry. To prevent the caps from overcooking, you can cover them with foil or parchment paper 15-20 minutes after baking. Bake at 180° C.
