2.5 hr smoke at 260 degrees. Mopped lightly with maple/bourbon/apple cider vinegar mixture during last half of the smoke. Began with a simple rub of coarsely ground black pepper, kosher salt, brown sugar and granulated garlic. I did sauce some of them (after the photo) to individual tastes.

GEIS used to be the acronym for General Electric Information Services, famous for the GEnie online service – a competitor to AOL and Compuserv , which also went up in smoke.
