    i’ve been vegan for a little over 7 years, but my girlfriend’s celiac diagnosis 2.5 years ago really shook things up. we were always … cuisine curious, but the celiac thing really accelerated that.

    3.) hot and sour soup. (china)

    4.) gochujang tacos. (mexico/korea)

    5.) zuppa toscana. (italy)

    6.) pierogis. (poland)

    7.) borscht. (ukraine)

    8.) gyro. (greece)

    9.) encacahuatadas de barbacoa. (mexico)

    10.) maafe. (mali)

    11.) tempeh lazone. (southern US)

    12.) tofu sisig with sinangag. (philippines)

    13.) hani. (midwest US)

    14.) drunken noodles. (thailand)

    15.) katsu curry. (japan)

    16.) plate lunch. (hawaii/polynesia)

    17.) rasta pasta. (jamaica)
