* Add some olive oil and let it heat up
* Add your diced shallot and minced garlic till it starts to become fragrant
* Add your spinach and mix
* Let the spinach cook completely down
* Remove the spinach and drain any excess liquid by squeezing the spinach
* Remove the skin from the sausage and place the meat in the hot skillet
* Break down the ground sausage till its completely cooked through
* Grab a mixing bowl and add cream cheese, spinach, ground sausage, artichoke hearts and ¾ cup of shredded parmesan cheese

* Remove the stems from all your mushrooms
* Fill up each mushroom with the spinach and artichoke mixture then top off each one with shredded parmesan cheese
* Preheat your oven or pellet grill to 350 degrees(175°C)
* Place your mushrooms in the pellet grill till golden brown. This step should take you around 25 minutes
* This step is optional but i like to place my mushrooms in the oven on broil till the cheese is crisped
* Let the mushrooms cool for 10 minutes
* Plate up and enjoy!
