Yummy! If anyone needs more wine and cooking hacks, DM me. I find adding a little red wine toward the beginning of the caramelization process can add a lot of flavor. This wasn’t the best wine I’ve ever used for it, it was a little too earthy. But I was in a rush and I grabbed the first one I found from my uncle’s cellar (the rest of his wine is mostly “Caymus”, and I know that one is really special, so I figured he wouldn’t miss whatever this is.) I’ll probably use the rest next week for a springtime vinaigrette!

Fun fact: if you do the trick to speed cook onions with baking soda and they turn purple/green, adding acid reverses the color change. Also never use baking soda cause it tastes like shit.
