For those diagnosed with Celiac disease — where gluten proteins found in ingredients like wheat trigger a damaging immune response — cooking at home can be safer than dining out. The same goes for people who are gluten-intolerant or choose to avoid the ingredient for other health reasons. No matter which category they belong to, Angelenos need not struggle to find stellar gluten-free-friendly dining destinations in Los Angeles. They’re about as prominent as one would expect, and these days, restaurants do far more than just a bland gluten-free sandwich bread substitute: Now, you can find pizzas, pastas, pastries, and Panamanian fried chicken, all sans gluten. In addition to being an Eater editor with a discerning palate, Nicole Adlman has been gluten-intolerant for at least a decade. Around that time, she finally stopped eating gluten-containing foods (breaking up with wheat was hard, okay?) and now generally abides by a zero-gluten diet to avoid unnecessary pain. What used to be a thorn in her side has actually become, in her eyes, a great thing: She no longer desires or even likes the taste of wheat-based foods — even the mere smell of flour tortillas is extremely off-putting to her (she goes for cassava or corn).
