    **Cheese rolls:**

    – 500 gr of yufka pastry

    – 500 gr of *Beyaz peynir* (white cheese), crumbled

    – 200 gr of spinach, chopped

    – one small onion, chopped

    – 1 egg

    – sesame seeds

    Preheat oven at 170-180C. Bake the onion until tender, add the spinach and let it wilt. Let it cool down in a sieve and press out excess water. Mix with the cheese. Cut yufka pastry in triangles, add the cheese mixture and roll into cigars. Brush with the egg and sprinkle the sesame seeds over it. Bake in the oven for about 30 minutes.     **Lentils for lunch**

    – 200 gr dry puy lentils, cooked

    – 1 cauliflower (1kg), chopped in pieces, also use the stem and leaves

    – 5 dates, chopped

    – 100 gr of feta chopped

    – 50 gr of pumpkin seeds.

    *Dressing: mix these together. :*

    – 2 tablespoons tahini

    – 1 garlic clove, rasped

    – 1/2 lemon, juiced

    – 1 tablespoon of pomegranate melasse or grape melasse

    – 2 tablespoons agave syrup

    – olive oil to make it thinner (i am at the bottom of my tahini making it rather thick)

    Toss the cauliflower with some salt, pepper and olive oil and roast in an oven, about 40 minutes at 210C. Mix after 20 minutes. Toast the pumpkin seeds in a pan with some olive oil until they started to pop. Let everything cool down a bit and mix 🙂
