Used the 321 method that a buddy of mine from work told me about, and they came out perfect.

They were falling apart before I could get the sauce on them for the last hour.

I was really worried about screwing up so much with my Austin XL because I’d only used charcoal before but I really impressed myself with this.

Seasoned with my own rub and a homemade BBQ sauce.

    Was a big fan of 3/2/1 to start but now I’m into four hours at 250. Still tender but not fall apart soggy. Try it next.
