    Did a dry brine with sea salt in the fridge for around 6 hours. Sprinkled a tiny bit more salt and a bit of pepper after she was done with the sear

    That’s perfect, beautiful medium with no grey and a nice sear. And love you cooked it to medium not medium rare, I think a big ribeye like that is better at medium
