Saw [this guy’s wife’s signature dish](https://www.reddit.com/r/tonightsdinner/s/lU9snsT6zA) and had to give it a go. Simple, cozy, and hit the spot. Stuck to the same recipe mostly, just tossed in some veggies I needed to use up. I’m no chef like this guy’s wife… I hardly ever cook for my partner, even though I’m naturally the better cook.
Edit: differences – I used olive oil, the ingredients in pic # 2 (r. pepper, shallot, garlic, tomato, zucchini), and one small dollop of sour cream. Spices included Costco’s finest garlic plus, oregano and chili flakes. Only thing I wish I had was Parmesan, oh well. Will cook again maybe for my partner more…
