For the full written recipe see below: RECIPE Ingredients – 1/3 cup (55g) icing/powdered sugar, 1/4 tsp (1g) salt, 1 cup (250ml) soy milk (or other plant milk), 1x 400ml (13.5oz) can coconut cream, chilled overnight, 1 packet (~130g) chocolate sandwich cookies, Method – 1. Add sugar, salt and plant milk to a bowl, whisk to combine. 2. Add coconut cream to a jug, whip with an electric beater or whisk until fluffy (around 2 minutes). 3. Add to plant milk mixture and fold to combine. 4. Reserve 3 chocolate cookies and then chop the rest into small pieces. 5. Fold them through the ice cream mixture. 6. Pour into a freezer safe container with a lid and freeze for 3 hours. 7. Remove from freezer and stir to reduce ice crystals, then return to freezer for 3 more hours. 8. Remove from the freezer after minimum of 6 hours and let sit for 5-10 minutes, 9. Chop reserved cookies, scoop ice cream into bowls and sprinkle over cookie pieces. Enjoy!
