High protein, low calorie McGriddle copycats. I started by making the pancakes using 4 cups of Kodiak pancake mix, 3 cups of skim milk, and 4 eggs. Each pancake was 2 tbsps of the mix, and I was able to get 40 pancakes that way. After that, I baked about 4 cups of egg whites at 350 for about 20ish minutes, then sliced them into 20 chunks. I got lazy with the sausage and just bought a couple bags of Jimmy Dean turkey sausage patties and put 2 of those on each sandwich, and added half a slice of 2% sharp cheddar. Paired with some sugar free syrup, each one comes out to 300 calories and 27g of protein. A little less protein than my usual breakfast, but I need something new in the morning for a bit. Hoping they reheat well!

They look great! If they don’t freeze well, you can try freezing each ingredient separately next time, or at least the wet ingredients separately from the dry. I find moisture can mess with the texture sometimes.

Awesome idea! I have a soft spot for McGriddles… I might have to try this.
