This is my first post so I’m very nervous! I have never made baked salmon before, so I tried my hand. I overcooked, and a little dry, but overall so delicious!

    I used:
    – Honey, lemon, rosemary and garlic on salmon. Baked in tin foil for 10 mins and broiled.

    – Blistered cherry tomatoes, salt, pepper and chili flake

    – 2 day cucumber, bell pepper and onion marinated in red wine vinegar and sugar, served over white rice.

    Edited to say: I blistered the tomatoes in the butter left from the salmon to pull all the flavor!

    Looks so good! Nice job. You could probably get away without broiling it. Or conversely – ONLY broiling it. Salmon cooks so fast that doing both is likely to overcook without any significant browning anyway!

  14. My, no fail, Salmon cooking method. Take salmon out of the refrigerator at least 20 minutes before you’re going to cook it. Put it on plate & season it with olive oil and your favorite seafood seasoning or just salt and pepper. Heat up the cast iron pan under the broiler in the center of the oven 10 – 15 min. Take hot pan out of the oven & place your fish in. Put it under the broiler again. You can move it closer to the heat. Watch it! Set the timer for 2- 4 minutes, depending on thickness of the fish. Fillets will cook faster. Salmon steaks only take a minute or two longer. Cooks quickly from the top and bottom.
