  1. Huy Fong Foods has a bunch of registered trademarks. They haven't tried to register a trademark for their most common product names like Sriracha or Sambal Oelek, but they have some variations on it. They have 8 current trademarks registered with the USPTO, including "HUY FONG FOODS", "HUY FONG FOODS INC. SINCE 1980", two Sriracha bottle shapes, the Sambal Oelek jar shape, their rooster drawing, "TUONG OT TOI VIET-NAM", and "TUONG OT SRIRACHA".

    The have a bunch of cancelled trademark registrations for "HE CALIFORNIA RED CHILI SAUCE", "THE CALIFORNIA GREEN", "TIA CHIEU SA-TE", one bottle shape, and "THE CALIFORNIA RED".

  2. I hate that the podcasts aren't labeled in name or thumbnail, and have seemingly taken over the channel. I used to watch all of their videos, now hardly any of them. I'm a part of an alienated section of the fanbase. Least they could do is label the podcasts like they do Last Meals. On title or thumbnail.

  3. 14:40 so US law for the trademarks is basically a use it or lose it situation. They have to exert some control to demonstrate that they are enforcing their trademark or it may get put into a generic (a public domain type thing) classification. If that happens, they can't later come in a prevent Kraft or whoever from doing what they say. 15:03 so as far as the dates go, it depends on what is actually trademarked. So here its chili crunch. Lao Gan Ma doesn't, and as far as I can tell never has, call their product a "chili crunch" so that product predating it doesn't matter unless it was called that by the public. That being said, you can look at things like google trends and you will see that "chili crunch" wasn't really in the vocab, at least on the english internet until around when momofuku released their product. These products weren't really called "chili crunch". They were chili oil, chili crisp, fried chili, etc.

  4. I would say I want my iceberg lettuce cold and romaine room temp and I wouldn't be surprised if the temperature preference was based on other vegetable and fruits in the salad varieties.

  5. I don't remember my first taste of chili crisp oil, being an old guy, but I remember my last one…. 2 days ago. It's been a kitchen staple for me, along with sambal and sriracha, since my first taste.

  10. weird Things I like Lao gan ma on : Chef boyardee or any pasta sauce, frozen burritos, ramen, mac and cheese, any canned soup with cream in it like clam chowder, or potato soup.

  12. To me, chili crisp is something that has forever been a (probably made in-house) condiment at Sichuan restaurants in the San Francisco Bay Area. It’s so surprising it took off because it always seemed to have a very non trendy, neighborhood diner quality to it.

  13. Shout out to HAB hot sauce in Portland Oregon. They have a Oregon Seaweed chili crisp and a Sauce Lord Peanut chili crisp.

    And nobody asked but Chick-Fil-A is the most overrated thing in any category ever. Okay I take that back, Apple is, but same pretentious type of people. There is nothing wrong with either outside of their patrons' lack of understanding that they're not special and that no one cares about them except their family but it's less of "care" and more of a case where people are forced to put up with them because they are socially obligated to.

  16. Sooo in Greek the emphasis goes to χω-ρια-τικη, so for English speakers it would be ho-ria-tiki

    PS. Great pronunciation on feta though Josh!
