PHOENIX — There will be a new place to dine on Mediterranean food this fall, according to a Wednesday announcement from Hi Noon Hospitality.

The new Mediterranean restaurant in Scottsdale, which is called Pinyon, will welcome diners at 7355 E. Scottsdale Mall upon its opening. It will use traditional cooking methods, such as open-flame grilling. Dishes will be paired with house-paid pita, crudos and pasta.

The restaurant will also offer a wide variety of seasonal salads and changing spreads and dips.

Pinyon will be High Noon Hospitality’s third restaurant concept after Buck & Rider and Ingo’s Tasty Food.

Why is new Mediterranean restaurant in Scottsdale called Pinyon?

The restaurant’s name comes from Hi Noon Hospitality Founder Adam Strecker’s travel memories.

While traveling along the coasts of Turkey, Italy, Greece, Spain and other countries, Strecker came to appreciate pine nut trees, which play a huge role in Mediterranean recipes.

The trees reminded him of the pinyon tree, which grows in Arizona, New Mexico and other states.

Thus, giving the restaurant this name blends Arizona and Mediterranean culture. It also represents Strecker’s desire to create dishes that are timeless and culturally relevant.

“At Pinyon, our goal is to provide more than just a meal,” Strecker said in the Wednesday announcement. “We aim to offer our guests an authentic Mediterranean experience — one that highlights the region’s rich culinary traditions while fostering a sense of community, one plate at a time.”
