Preferred combinations?

Charcuterie board enthusiast here!
I love putting one together every weekend—sometimes just for my partner and me, and of course whenever we have guests.

Now I’m curious: what’s your favorite cheese + meat combo?
If you could only pick one pair, what would it be?

I think I’d go with provolone + bresaola.
