Turkish Red Lentil Soup (Mercimek çorbası)

Ingredients
2 tbsp unsalted butter (can be omitted for a vegan option)
2 tbsp vegetable oil
1 1/2 tbsp tomato paste
1 large onion diced
1 large carrot diced
1 medium-sized potato diced
1 cup red lentils soaked for 10-20 min
salt to taste
pepper to taste
1 1/2 tsp paprika or to taste
5 cups vegetable/chicken/beef broth or as needed (water can also be used)

Instructions
Heat oil and butter in a large pot over medium-high heat.
Sauté tomato paste for 1-2 minutes, then add onions and garlic(I forgot to mention the garlic in the video) , cooking until translucent.
Stir in carrots, potatoes, and soaked lentils for 1-2 minutes. Season with salt, pepper, and paprika, then add broth.
Cover and simmer for 15 minutes until soft. Blend until smooth, adjusting consistency with more broth if needed. Taste, adjust seasoning, and serve hot with croutons, parsley, chili flakes, mint or chili oil, and lemon juice.
